Wow I could not believe how close to the making of my late mum's POLISH PIEROGI this is. I was actually looking for Mario's recipe for Gnocchi which we called PELUSHI I grew up knowing the meaning of them as being the Lazy man's Pierogi Anyway back to this recipe I AM SOOO HAPPY to have found this as Mum after making the Pasta dough & setting aside would make a similar filling to Mario The only difference is Mum would add FARM CHEESE & only salt & Pepper THANK YOU I never got around to learning how to make the pasta dough & now that my Mum is now in Heaven I am so thrilled to find this recipe

I actually used sweet potatoes instead, but kept everything else in the filling the same. Served with a Gorgonzola cream sauce and walnuts. (Used Ina Garten's recipe for the sauce

This is a wonderful, flavorful and easy filling to make. I thought that the prep of the onions and pancetta in the food processor really gave this dish and intense flavor with a nice texture. Thanks Mario.
