I just made this soup and it is very good, full of flavor. I have never tried broccoli soup and I don't know how its supposed to taste but mine sure tastes good. I will serve it with shredded xtra sharp cheddar on top to my dinner guests tonight and see how they like it. I have also made changes of using combination of olive oil and butter instead of just butter and used 1% low fat milk instead of cream and also added garlic as many commented. One thing though, I don't know how much of broccoli I really used.... I've used ALL I had and it was 6 bunches in all, crowns and stems. I am thinking its well over what the recipe called for so I double up all the other ingredients and made a double batch. Its a very delicious soup so I am very happy to have a lot of it!

I love this easy recipe and I use it every summer when our garden has more broccoli than I know what to do with! I freeze batches and enjoy it year-round!

This broccoli soup was delicious, just as it was. I would not change a thing, although I didn't make my own croutons, I just used Parmesan bread crisps to dip in the soup to get a cheesy addition every other bite.

My husband is obsessed with the broccoli soup at panera and mine is just never quite right until now! I added some white wine to the veggies before the broth and also used 2 fresh bay leaves. Didn't even need the cream! Used very sharp, aged cheddar which is what I think made the biggest difference! Not usually a Neely fan, but perhaps now I am!
