This is soup is very simple and fresh. I took some advice from past reviews and I added a couple cloves of minced garlic, as well as added a tsp. of oregano and a little nutmeg. YUM! I didn't have any onions on hand so I used 2-3 large shallots instead... AMAZING! I will defiantly make this again.

As others had mentioned on here, I did add a clove of garlic, and left some of the broccoli pieces out while blending. Even after reading the reviews, I was surpised at how this soup turned out--it's delicious! I love to cook, but have only ever made potato soup, and that was years ago, so I didn't exactly expect the recipe to end up tasting like the "real" thing! I can't wait to serve this at our next church meal--finally something I can fix that someone will think, "oh my goodness, I need that recipe!!"

For a healthier spin, I skipped the cream and it tasted great without it. My husband loved it and the leftovers lasted for several days. Excellent!

Quick & easy recipe. All that I changed was to add some cheddar cheese, and some oregano. Will make this again!!

I also added cheddar but due to low carb diet, I didn't add the flour. This is awesome soup. I will be making more of this!

This is a great soup... I added some garlic and ground pepper. And instead of cream used non-fat milk. Turned out great. Good way to get your veggies in a savory way. Awesome!

As soon as I watched the episode, because I happened to have everything on hand, I ran into my kitchen to make the soup which was really great. I was happy I'd tried it, and hopefully will get my family to like it too....they're not into soup like me! I did tweak the recipie slightly, used EEVO & butter to saute the veggies & I added a small amount of garlic powder for more flavor...I love garlic....and I left some of the broccoli florets whole when it was time to blend. When ready to serve, I sprinkled shredded cheddar cheese on top then dropped in the croutons......DELISH!, can't wait to make another batch.....just wish I could get some info on the calorie count.

This was delicious! I didn't use the carrot because I don't like them and I didn't have an immersion blender so I used a plain old potato masher (the broccoli and onion are so soft anyway and the consistency was nice with little chunks of broccoli throughout. I also added a pinch of red pepper flakes to the broccoli as it sauteed, gave it a "little kick" as Gina says! The only other addition I made was a handful of grated sharp cheddar at the end. I had the leftovers for breakfast! Thanks Neelys!
