    Delicious! I didn't use the carrot and it was still very tasty. It was rich tasting without all the cream so I didn't have to feel bad eating it. Thanks for a great recipe!

    Excellent. Did not use the Carrot, but used celery diced. Did not have cream so I used sour cream. Turned out fabulous.

    This recipe is a delicious and a great change from the typical broccoli soups that are just cream or cheese based. Because of my dietary restrictions, I did make a couple changes such as omitting the butter and cream. I used olive oil and I felt the soup was creamy enough without cream. As per another reviewer's suggestion, I added garlic and red pepper just to use up some other things I had. Hey Neelys, thanks for the tasty recipe!

    A welcome change from Broccoli Cheese Soup - you definitely won't miss the cheese! Added chopped red pepper, used red onion and pre-shredded carrots I had leftover in the fridge, along with leftover garlic bread from an Italian meal a few nights before. Great lunchtime recipe, easy to prepare, and light! Also used half/half instead of heavy cream, and did not fully puree - I like some still identifiable chunks of veggies! Great recipe!

    This is a very good recipe for an easy broccoli soup. I substitute a can of fat free evaporated milk and add one chopped bell pepper and a handful of chopped parsley to the veggie mix. A sprinkling of grated cheddar cheese is a perfect topping!
