We just finished our meal and we loved every morsel. I shredded Pecorino-Romano cheese and used the juice of half a lime, because that’s what I had on hand. After reading some of the other reviews: I did not add any salt to the cheese/lime/mayo mixture. I did add granulated garlic powder. I let the mayo mix set for half an hour. I also dry rubbed the salmon and let it set to room temp before cooking it. The flavors permeated the filet. I will also use the mayo mixture in my next Cole slaw recipe. The spring mix was used in place of lettuce greens. This will be a go to recipe on a monthly basis. Note: If you have applewood smoked sea salt; use that on the fish. I used about two pinches on each side of the fish. I will try drunken goat cheese next time. It's not overpowering; a mild cheese.

The goat cheese is far too tangy for salmon. It completely masked the fresh taste of the fish. I have made this minus the goat cheese and it was very good.

This was delicious and very easy. My husband said it was the best sandwich he has had this year.

This recipe was delicious!!! I have never cooked salmon and only had it once which was a bad experience. I decided to give salmon one more try and came upon this recipe. It was easy simple and very quick which was great because I am a full time student and have a little one and my husband doesn't cook. Time is always precious. USE LESS SALT is my only critique. i used about 1 1/2 teaspoons and my husband said it was a bit too salty but still really good. KEEP IT UP BIG DADDY U ALWAYS IMPRESS US!!

I made the recipe as called for and everyone at dinner loved the sandwiches. Since then, I have made the salmon as an entree with the goat cheese mayo as a topping. Additionally, the mayo makes a great dip for veggies and cajun flavored potato chips. Don't make too much mayo as the recipe goes a long way.

I followed this recipe using 2 salmon filets for my husband and me and one tilapia filet for our daughter. The cajun seasoning and mayo was good with both fish.

I love salmon and this recipe would have been great but the salt just ruined the salmon flavor. Salmon is such a flavorful fish on it's own, that seasoning needs to be somewhat delicate. I suggest using a teaspoon of salt and dont rub your salmon with too much seasoning, just a touch will make this sandwich to die for!

OMG!!! This is a great salmon sandwich. The goat cheese mayo takes this sandwich to the next level. Be careful not to add to much salt to the cajun seasoning. Also, try watercress or arugula instead of lettuce. This enhances the sandwich even more. Rock on Aaron!!!!!

I think 2 T. of seasoning per serving is a little much. I cut it in half and my husband still thought it was too seasoned, but I liked it.
