    I'm especially fond of this recipe because this is the first Rachel Ray program I ever saw. I had told my husband I was going to quit our cable service when flipping through the channels, I accidentally discovered Food Network and Rachel Ray. I've been hooked ever since, which is why we still have cable. Meatloaf mix isn't available in California (my butcher says it's against the law here, so I either buy the three flavors seperately, or sub ground sirloin.

    I think you could skip the EVOO because the pancetta & other meats create enough oil. Other than that very easy & delicious

    I saw Rachel make this on Sunday before I went to my holiday work party. I made it that day and it was a huge hit. Everyone at the party wanted this recipe!!!

    My 9 year old son and I were watching the episode and he wanted to make this for dinner. We ran out and got the ingredients that we didn't have and made it for dinner that night. The entire family loved it. It is very easy to make and leftovers are wonderful!

    After two days of cold, soupy fog, this Christmas Pasta, paired with bread right from the oven, made a soul-warming hit with my family. We seldom have pasta at our house, so this was a real treat, with all that meat. Will do this again at New Years.

    Rachel is right, this sauce gets better and better as the flavors mesh together. It's a very tasty sauce. I could not find the pancetta where I live and used cut up peices of bacon instead as it was the closest I could come to pancetta. I am sure it's even better with the pancetta.
