Wonderful. First, I had to figure out what cannellini beans are. My local grocery calls them White Kidney beans. I also added a bit of water and EVOO to thin it. Very Very Good.

Great dip recipe! Didn't use mint, but probably would have been better with it. Added a little more olive oil to thin out the dip a bit. Served with pita chips.

This was very easy to make, and perfect to whip up for unexpected company. Two things, I added parsley at the end so it didn't turn dip green, and this was EVEN BETTER two days later, hated to toss the leftovers!

I served it with fresh vegetables- carrots, mushrooms,romaine hearts and broccoli and garnised it with fresh chive flowers. It was not quite loose enough so I added a couple of tablespoons of water. I wish Rachael had given more exact amounts of the herbs rather than springs, such as tablespoons or cups. Anyway, it turned out great and we all loved it.

If you're in the market for a great (and good for you! dip for spring, give this a try! I like hummus when I have it in restaurants, but have never been able to make it at home. I wanted a hummus-type dip for weekday lunches and found this recipe. So glad I did. The mint makes the taste so "bright!" The only deviation from the recipe was that I added a bit of garlic oil (just add a bit of olive oil and two garlic cloves to a pan and sautee for a few minutes on low. I also only had dried thyme. Tasted great! I highly recommend this recipe!

I liked it but I thought it could use more spices. I would add more garlic and thyme and take it from there.

I have made this dip a few years ago for my party. I loved it but it turned out to be more than I expected so I had some left over dip. Instead of throwing it away, I added some chicken stock and turn the dip into a bean soup. It was very tasty. I have been using this receipe for the dip for parties and very often the soup since then.
