My husband and son don't do eggplant and aren't big on black olives either, so I skipped them. Anyway, I took this to a potluck. Two other people brought baked ziti dishes. I'm the only one who brought home an empty pan. I used almost double the cheese, but, hey, why not kick it up another notch?

This was soooo good. I wasn't sure how to choose and prepare the eggplant, but I stumbled my way through. This recipe takes time, but it is definitely worth it!
