    This dish does take some time, but is so worth the effort! My husband, parents and brother all loved it and they are a very tough crowd to please. Great to make in advance for a dinner of 5-6 people, then just pop in the oven.

    I made this recipe early this afternoon and put it in the refrigerator, brought the kids for their flu shots. I came home and popped it in the oven. Sixty minutes later a wonderful meal. Really, really excellent, loved the white sauce and wouldn't change a thing in the recipe. Perfectly seasoned. Makes plenty, leftovers for tomorrow!

    If I could rate this ten stars I would. I'm not a cook and have to follow recipes. This was the best disk I've ever made. Emeril, you're nothing short of genius in the kitchen. You rock my world!

    I wanted to try something different, and boy did I find it.... even my daughter loved it and she does not care for eggplant at all. Everyone I shared this with loved it.... try it you'll like it.

    This recipe was SO delicious. Using others advice, we doubled the amount of eggplant, and grilled it instead of fried. Also did not take an hour to bake. Not a quick recipe, but highly recommended for a weekend meal.
