    I would use more than 1 eggplant as I did not have enough to layer. But the flavor has a dash of sweetness which reminds me of Greek dishes. If I make this again, I will expperiment with the recipe.

    While I was cooking this receipe my son's friend kept coming into the kitchen and wanted to pretaste it. I've already cooked it twice. It's worth the time it takes to prepare it. I'll be having a party on Saturday and it's one of the items on the menu. Thanks Emeril!

    I've been making this dish for family get togethers since I first saw it on Emeril 2 years ago, and that's because everyone requests it.
    I practically double the recipe and use a lasagna pan. I also use a combination of 1/2 hot italian sausage and 1/2 ground beef instead of all sausage. I also omit the olives.

    I love this recipe and make it quite often. Everyone has loved it also. I did have to make a few changes to it to fit my personal preference. I use non-fat milk instead of whole milk; I only use 1/2 lb. of the Italian sausage; I don't use fresh basil and nutmeg; and I have had to use Rigatoni instead of Ziti. A lot of these changes are to fit my budget and not waste food.

    The first time I made this it was delicous, but my stomach was killing me. For those that are slightly lactose intolerant I recommend changing to a non-fat milk or 1%.

    Just enough spice to give your mouth a kick! It takes a little while to prepare, but is WELL worth the time. Make it the night before, then pop it in the oven for a quick hot meal.
