I made this for a work Pot Luck and it was a huge hit. Everyone just loved it. I used Pork Chorizo not the hot kind and it was perfect, not to hot, but just right. I did have to cook it a bit longer, next time I will try it with the beef Chorizo. The flavors were amazing. I liked the fact that you make it the night before and then just cook it in the morning when you are ready.

made enough for a crowd and got rave reviews! I used Jimmy Dean HOT sausage and roasted poblanos - it was plenty spicy enough, but I served it with my own spice roast salsa on the side for even more kick. I will absolutely make this again

I used pork chorizo, I think I may drain the meat before adding the onions and peppers. Also I may cook it uncovered to dry it out more. Otherwise, AMAZING!!!! Just too yummy for words!

I made this for Easter brunch. My in-laws loved it! I saved some of the onions and red bell peppers to saute with vegetable oil so that I could made a small vegetarian one for my mother-in-law. I assembled it the same way (leaving out the chorizo sausage. She really liked it. The rest of us LOVED the recipe as is. I rubbed the poblano peppers with a paper towel to remove the charred skin, which worked perfectly. I am not a huge fan of spicey dishes, but this was full of flavor without being overwhelming or too spicey. I will DEFINITELY make this recipe again. The family will demand it!

I made this for the first time for a breakfast potluck at work and it was a huge success. I could have made two and they would have been gone, for sure. Give it a try - you won't regret it. It has a little spicy kick from the pepper jack cheese and the tobasco but it's just right.

About two years ago I made this for my boyfriend for breakfast. He will soon be my husband and I believe a part of it has to do with this recipe!! He loves it and asks for it all the time...its pretty much a sunday morning staple in our home. And also...I love it too. The plablanos are great. I eat it with sour cream and some home made has browns. Great meal!
