I've made this wonderful dish for my family and friends many times, and always asked for the recipe. I use whole canned chili's for ease and a mildier taste, fruit salad and breakfast is complete! Thanks Emeril!

I served this casserole at a brunch. My guests loved it, but it didn't really impress me. I don't think it was as spicy as other reviews have made it out to be, so if you like spice don't hold back...it didn't knock my socks off on the hotness scale. I would also let the casserole rest for longer than 10 minutes.

My husband and kids are big Mexican food lovers and this was a big hit with all of them. Even my picky, non-vegetable loving son gobbled this up. I adjusted a few things to our tastes, but pretty much followed this recipe with much success.

This is a great recipe, but I changed a few things. 1 I didn't roast my own peppers, I used the canned chopped chiles. 2 I used regular mild sausage. 3 I used regular mont. jack cheese, not with peppers. 4 I used flour tortillas. 5 I halved the recipe and did it in an 8x8 pan. I was perfect and so easy!!

I did a brunch for 18 people and this casserole was the biggest hit! People could not stop talking about it and some even took leftovers. However, I did use already cooked chorizo instead of the grounds for the dish. I just sliced it thin and sauteed it a bit. A great easy recipe!!

This casserole has become a tradition for us to make at our annual beach week with friends. It is a bit of work, but well worth the trouble!

I have made this recipe several times for our camping group. It doubles very well. I usually make it in the am, saute the tortillas in oil to soften them and then use canned green chiles. It is wonderful and no one has said it is too hot. I get asked for the recipe every time I make it.
