This is an awesome recipe! I have been making it for years now and it has proven to be quite a keeper. We entertain alot in our artsy very multicultural household; this recipe has proven to be a real crowd pleaser and a real manpleaser: for some reason, time and again, all the men who eat this, white, black, and other ethno-origin, just love it! It is a great spin on what was previously a rather tired classic...tired that is when made with instant pudding and generic, commercial supermarket vanilla wafers.
Since the vanilla wafers are a standout element of the recipe, I do make the extra effort to get excellent ones: my choice are generally Midel as they have a good texture and excellent flavor and all natural ingredients...works for me...just sayin'...!

This is a pretty easy recipe to make and adds a great twist on the common banana pudding.

This recipe seemed like it would be great when I read it, but it wasn't. In my opinion, the flour made the custard task chalky, and discolored the custard a bit. The banana flavor really didn't add much to the recipe either. This recipe gets a big thumbs down. It was not worth time and effort to prepare.

Having grown up in south Mississippi, I've had my share of banana pudding. This recipe is as good as any I've had, though I tend to forego the walnuts and chocolate and stick with the simple pudding and rum whipped cream.
A sure-fire hit for any potluck that won't take all night or empty the cupboard.

One question: Why does emeril's recipes have to be so complicated? It is obvious that he is not for the ordinary at home cook.

Hey, I can't say enough good things about this recipe. It is pretty straightforwardly easy to make ( I suggest using really high quality van. wafers for premium results....those by Midel are our favs.. I have a bunch of finicky big hungry men come through our house with a wide range of backgrounds and tastes, some very down home and some very international and gourmet/haute cuisine oriented and to a man THEY LOVE THIS RECIPE. We swapped pecans for the walnuts but otherwise made it just as written. And yep, the women love it too. Tastes great a day or so later, really great, much like trifle that sets up properly, so this is a good make ahead item if you know how to handle your bananas so they won't darken up. It is a dressed up classic, and it works! Also, it is a bit unexpected, so when we serve it, folks are generally surprised and delighted (unless they hate banana...too bad!
