This was such an uncommon pairing but I had a half pound of Italian sausage and about a pound of cut up butternut squash that needed to be used up. Roasted the cut squash with EVOO for 30 min. I used dried herbs (1/2 tsp each of sage and marjoram and about 1/2 tsp of fresh thyme. Did not do the fresh sage thing. Added about 1/4 t of crushed red pepper. I puréed with immersion blender but did not strain. It was AWESOME. Served with sourdough bread.

Easy to follow recipe. Delicious. I didn't strain the butternut squash to give some texture to the soup. Also, next time, I will use less sausage in the puree, and add chunks of it on the soup.

OMG!! I wish I could upload the picture I took of my husband with the pot that I made this soup ... The pot was up to his mouth (literally as he was "helping" me clean up after I was done cooking. So funny and absolutely true. This soup is THAT good! We played with the quantities a little using a pound of sausage and a cup of heavy cream along with 8 cups of freshly made chicken stock. We also added a little crushed red pepper to the butternut squash as we roasted it. This was an awesome soup. Trust me!

Oh my goodness I love this soup! I totally puree it so that it is smooth and I didn't strain it or add the sage leaves, as I was hungry! LOL I love love love this soup, its so good and tastes delicious! Its savory too! I just cannot say enough good things about it! Make this soup, try it and you will love it too!

Excellent. If you are feeding a crowd you might need to double this. I used a smaller than large squash and it worked well for me. I will double next time I made it for sure!! (I feed 4 boys and a hungry husband

One of our all time favorite soups, not sure why they removed the recipe, but thankfully I was able to find it on Emeril's website and I copied and pasted it to my email so I'll never lose it again! For jtwig, I can't post the entire recipe here because it goes over the character limit, but you can find it if you google "butternut squash sausage soup emeril". I tried to provide the link, but it won't let me. Happy eating!

I love this soup. My husband loves it, and everyone I've ever served it to has questioned what is it that makes this a little different. It's the sausage! I've had it many times, the addition of the sausage really makes it! The flavor changes slightly based on which italian sausage you prefer, but without a doubt, my most favorite soup. For whatever reason, I just tried to pull up the recipe, and it's no longer available. If anyone has it, please post here.

This was delicious. My husband hates sweet squash, so I actually substituted summer squash, and the dish came out wonderful.
