I used mostly sweet italian sausage but added some hot italian sausage. Talk about kicking it up a notch. Would make it again

My family requests this soup at least every other week. It's easy to make (I don't bother with straining the soup and making the fried sage leaves and always delicious, even when using dried herbs, rather than fresh ones.

My husband looked at me askance when I said we would have this soup for supper. Butternut squash in a soup? But he and I love it. I also did not strain it, but I will next time to take out the little tough gristle pieces from the sausage.

i didn't think the two main ingredients would mix as well as they do - the flavors are perfect together! To give the soup some "meatiness" I didn't belnd all the saugage in the blender with the butternut squash - I scouped some out and left it behind so I would have chunks in it once it was all done.
Plus, I also recommend roasting the squash with some olive oil, garlic and herbs in the oven (not face-down

I enjoyed the soup, but found it to be a bit too "earthy" in taste- I guess I was looking for someting a bit more sweet/savory. Still, all-in-all great soup; though I will be tweaking it a bit more to my tastes next time I make it.

This recipe was easy and I never imagined the flavor would be so good.Nothing was overpowering. I think the sausage and garlic is a good combination with the squash.

Absolutely delicious! Is a family favorite. (BTW - I don't strain soup as the recipe recommends, and it's still wonderful!
