I really liked the flavor of the potatoes and onions but found that I needed to cook it at a much higher temperature to get the vinegar to carmelize. Next time I might try doing it on broil and leaving the skin on to see if I can get the potatoes to crisp up.

These were the best baked potatoes, loved the balsamic reduction. Lotsa flavor,great color. This is an easy recipe to keep in your head.

I added crushed garlic to my vinegar to make sure it mixed well. I also tossed them in olive oil first, omitted the butter then sprinkled all my dry seasoning on like, Californian garlic, sweet basil and oregano, sea salt and fresh pepper. This made it all stick easily. Then added the red wine vinegar /fresh crushed garlic mix and tossed before I baked. I served it with steak....yum!

I did not make the Roast with these as I made my own Pan-Seared Pork Chops with a rich balsamic sauce to top. I made the Balsamic and Potatoes and Onions and they were amazing! The aroma filled my house and I swear the neighbors were going to start stopping by. The only thing I would different next time is cut the cooking time down a bit on the potatoes before putting them in the oven. Other than that, this will be a new favorite in our house!

Loved the potatoes! next time will cut them down a bit more. Used sweet vidallia onions instead of red and they were wonderful! The pork was good and moist. We never had fennel before. After grinding it, it smelled like black licorice to us. Myself and my girlfriend don't care for licorice. We rolled the meat into it and baked it off. I see how the fennel compliments the rosemary. I'm still not crazy for Fennel and neither is my girl but we enjoyed the dish. Potatoes will be made again! Don't let my lack of taste scare you off from preparing this. We made it in July, but this tastes like a wonderful meal for a cold winter's day.

I found this recipe while searching on the site for a pork meal with potatoes. Easy to assemble, and absolutely delicious! Even my teen son, who is usually not crazy about pork, thought it was good.

This was fairly easy to prepare and was absolutely delicious. I made both the potatoes/onions and the pork. The pork was moist and the flavors were excellent. The balsamic on the onions/potatoes was really good, too. The onions were incredibly sweet. Everyone loved it!
