Great flavor and love this recipe. Three minor changes though: no cheese, add 1 tsp of cumin and add a can of corn which is a perfect compliment to the soup (plus next time I think I'll add 2 cans of black beans and reduce the lime to 1 instead of 2. Serve with flour tortillas on the side and you have a great meal!

This soup was so good. I forgot to add the lime and the cheese. It may have been good with the cheese and lime but it was fantastic without those so if you dont have those items it shouldn't stop you from making this great dish. I didnt make many other changes but I did only used one jalapeno and the spice was perfect. I cut the chicken in half to help it cook faster. I did not add any salt or pepper.

Sooooo good. This will be a regular in the rotation. Did the recipe just about exactly - didn't have fire roasted tomatoes, only regular diced, and used one serrano and one jalapeno as that was all I had. And I almost always add cumin to just about any south of the border dish I do, as it is my husbands favorite spice - added 1 T. Really easy and doesn't need any mucking with.

I love citrus, cilantro, tomatoes and spice. This recipe showcased those ingredients perfectly. I did alter the recipe slightly by adding a poblano pepper, two 10 oz cans of Mexican style tomatoes with chili and lime, instead of the two jalapenos and reduced the fresh lime juice to 1 lime. Finally, adding three heaping tablespoons of a jarred sofrito, which added more body to the broth. I was completely satisfied with the outcome of the recipe.

This soup tasted good, especially for how easy it is to make and how little time it takes to cook. However, it didn't knock my socks off.
My husband complained of major heartburn/indegestion after eating this for dinner, so those with weak stomachs beware!

Great soup - nice flavors and hearty without being heavy. I used boneless skinless chicken thighs instead of breasts for a nice deep flavor (trimmed off the fat, of course. I found that one jalapeño was plenty. Instead of the grilled tortilla, purchased tortilla strips (salad topping are a nice way to get the crunch and some extra flavor. I also used a pint of home-canned tomatoes instead of the purchased tomatoes, and they tasted just fine.

omg this is amazing. Had this for dinner tonight with open faced bacon n tomato grilled cheese sandwiches. As it cooked I tasted along the way and was a little worried because the broth seemed lacking. Once I shredded the chicken, and added the lime and cilantro the taste was transformed. Melted cheese on top and garnished with avocado. Used the lime sparingly and it was perfect!
