    Really Emerill? This was fantastic!. Easy to make and simple to follow recipe. You can't go wrong with the seasoning. You can make it as spicy or mild as you want. Used a jalapeno sausage for added kick. Superb!

    Fine restaurant quality dish. The pasta was velvety with just the right spice and sauce. I did substitute smoked sausage for the hot sausage as my family does not enjoy the heat.

    Amazing!!! My whole family, including a toddler and picky teenager, ate this up!! I had a few modifications because I didn't have everything on hand when I found the receipe. Soooo good! I will be making this again soon!

    Very good recipe. My son wanted me to make this tonight so together we created this dish and we were pleasently surprised. The only thing that I will do differently next time is to add a little red pepper flakes for heat.

    This is my absolutely MOST FAVORITE recipe to go to when we have company. I've change the sausage a little bit and use a smoked sausage, reduced the amount of heat in the essence itself, and increased the quantities so I can make it for a crowd. Haven't had a dissatisfied tummy yet!

    This recipe is outstanding! I modified it slightly (sweet Italian sausage and only one tbsp of Essence because I don't like an extreme amount of spice and it was perfect! I'm looking forward to making this for company!

    This recipe is very tasty and very easy and fast to prepare. I didn't even make Emeril's Essence ( I only sprinkled the Essence ingredients into the dish when called for and it still came out great. I was out of heavy cream and used evaporated milk instead and it was delicious!

    This was absolutely delicious! The flavors taste impressive together and it wasn't hard to make at all. I've never cooked with raw shrimp before (always took the shortcut of cooked shrimp, but now, I won't use anything else. My DH kept uttering "mmm's" of approval as he scarfed it down last night... as a newlywed struggling to think of dinner menus each week, I'm DEFINITELY adding this to my regular rotation.

    I've made this recipe twice, and it's been a hit both times. The hot sausage gives it quite a bite. The combination of the peppers, shallots, and garlic flavors are wonderful. And, if you're lucky enough to have any left over, it's twice as good the next day. Thanks Emeril!!

    This is a great recipe. Just the right amount of spice-even my 4 year-old and 2 year-old ate it up. I used campanelle pasta and a combo of shrimp and scallops. I also used half and half with a little bit of cornstarch mixed with water to thicken. I would save this for a special occasion, though, because it takes some time to prepare.
