    Traditional guisados have vegetables. I added cauliflower and swapped the water for chicken broth, used chicken thigh meat for more flavor, and added more chipotle peppers for more heat.

    It is very tasty, but I had to tweak it with the hot stuff since we like it spicy..but then we are Mexicans and like spicy food. I added chicken broth instead of water and that helped a lot too.

    Bland, seemed it was missing something. We used it in wraps, with the cheese and fixings it helped but will not make this again.

    I like the suggestion of boiling instead of sauteing my chicken, it allows more time to prepare other dishes. I left out the chipotle, instead i use white wine. Thank you for the receipt, it hard to find one to stick too. My family enjoyed the dish.

    I made this the other nite i don't honestly think it would be good with pasta or rice but it does make a good taco filling will make this again but for tacos only.

    These comments are from a F/T working mom with a picky husband and two young children...Mostly I say, thank you to the two previous reviewers. The tips were helpful.
    1 The meal is DELISH...sadly, my market was out of chipotle, but I substituted with hot, habaneras...not the same, but still great for the family. I can't wait to try with chipotle sauce.
    2 I'm no chef, but I LOVE to cook, so I was really pleased with the ease.
    3 I served this over Spanish rice. The recipe does not make any suggestions, so I added Green Olives / Pimentos to the Yellow Spanish Rice...what a combination.
    4 If you eat normal size family portions with two adults and two young children, this amount is perfect with minimal leftovers. If you add more chicken and more tomatoes, you could probably feed 5.
    5 While it's easy to prepare (very easy the prep time is NOT 5 minutes if you consider your side dishes...this is not a meal by itself, so consider adding some onion and olives to your rice.
    6 Hey, egg noodles wouldn't be awful either, if the kids hate rice.

    Spices are just right - don't change a thing. I cook the meat on sunday night and we eat it early in the week for a quick delicious dinner and it is ready in 15 min. Use hard and soft taco's and loads of fixings.

    One other thing for families trying to set up meals and save money. DON'T throw away the water you cook the chicken in.. It is now Chicken Broth
    - Strain it - add rice and carrots - 1 small cubed breast of chicken
    - season with tarragon, salt & pepper (boulion cube if need

    Now you have another meal ready to store and serve during the week.

    I'M FROM MEXICO AND ONLY ONE TEA SPOON OF CHIPOTLE JUICE IS ENOUGH BECAUSE IS VERY HOT. IF YOU WANT IT MILD JUST ADD MORE TOMATO. YOU CAN GIVE MORE TASTE ADD SOME POTATOS IN QUARTER
