    Easy Recipe & Great for the whole family! Substituted Blue Cheese with Feta because my husband is allergic to Blue Cheese, but we love it!!! :

    I made this recipe last night for my boyfriend and another couple. Everyone loved it! I substituted tomato & basil crumbled feta cheese for the blue cheese, but the dish was surprisingly easy to put together. I had to cook the chicken a bit longer than 25 minutes, but the breasts were pretty thick. Definately a do-over.

    I made this for my family tonight and it was a complete hit! I made all 3 dishes exactly as the recipes show, except I substituted fresh sugar snap peas for the green beans since my hubby doesn't care for green beans...the tomotoes were perfect with the sugar snaps. This meal tastes great, is fairly easy to make, and the colors look great on the table.

    Our house loves cord en Bleu and this was the best yet. Easy - Easy - Easy. The kids ate the spinach without knowing it was spinach. Excellent flavor profile -just the right mix of smoky and tangy. Very juicy.

    This meal is definitely a winner. The whole meal comes together quickly and the flavors of the three dishes compliment each other nicely. The filling in the chicken really perks up the dish. The beans are crisp and lightly seasoned. I did not add the scallions to the potatoes as we don't really care for them, but the potatoes were plenty tasty without them.

    very good flavor and easy to make the only thing I didn't like was the bacon that was on the bottom of the chicken was soggy nest time I think I'll just stick the bacon on top so all of it is crispy.

    I just loved this. My husband is not a great lover of Bleu Cheese so I used a Jalapeno Jack in his. You can use any cheese you like. I added extra spinach also. We just loved it and will make it often.
    Just make sure you do not over cook it. It dries out fast.

    I'm a new cook (junior in college and I made this dinner tonight for my family. They loved it, especially the chicken. We didn't really enjoy the green beans and tomatoes though, I think I might of used too much thyme. And though I didn't make this is 30 minutes (just a little over, I still think it was easy and fast.

    I'm not a very good cook. This is the first 30 minute meal I tried and was nervous about "stuffing" a chicken breast. It probably wasn't as "pretty" as Rachel's, but it worked and EVERYONE in my family loved it. (I have two who won't eat blue cheese so I omitted it out of their stuffing. The rest of the meal was easy and delicious.It probably took me a little longer than 30 minutes, maybe 40. I was happy with that!

    My mouth felt like it was on a taste high. This recipe had all the ingredients for an exempliary taste sensation. I cooked this meal first because it had all my families favorite items; chicken, green beans and potatoes. I then had a wonderful time putting it all together and plating it so it looked like the dish was prepared at a fancy restaurant. The blue cheese, arugula and spinach gave the chicken a lift from the ordinary everyday sauteed or fried fare. The colorful green beans with tomatoes and thyme were so appealing and the smashed potatoes made our taste buds dance with delight. This has to be one of the most fun, flavorful dinners I have put together in a long time. Thanks Rachel.
