    Not sure why, but this just didn't come out the way I had hoped. Perhaps I'm not a shallot fan. I've made other versions that I much preferred.

    This is a great dish!! I've been craving spinach like crazy with my 3rd pregnancy and I wanted to try something different, I'm so glad I found this!! I did substitute fat free half and half for the cream and used red onions instead of the shallots, just because I didn't have any in the pantry. I also cut back to 1 Tbsp. of butter and it was delicious! The whole family ate it, even my two girls who are 1 and 3!

    Excellent taste even with reduced fat. I reduced the fat by using a 1/4 or less of whole milk and only 1 tbsp of butter. The family enjoyed.

    Wonderful recipe! Easy to make and the flavor is delicious. Made it to go with rib eye steak and wasn't sure how I would like it. I ate it instead of A1 on my steak for the first time ever!!

    Halfway through preparing this I found out a couple of my guests weren't fans of creamed spinach at all. After tasting this they remarked on how it didn't turn into some kind of slimy mush and changed their minds about creamed spinach altogether!

    Most of the cream was absorbed and didn't look at all like the picture above, but it was tasty nonetheless. I'd definitely consider going a little easy on the salt.

    Loved this! A lighter alternative to the rue based recipes which I find pasty. I didn't try any of the alternatives suggested because it's just wonderful as it is. However, I did substitute half and half for the heavy cream. And, I added the raw chopped spinach at the very end and tossed it until it just turned soft. I prefer lightly cooked spinach.

    Very nice ... i aded 2 table spoons of parmesan and 1 teaspoon of italian herbs ... i turned out delicious ... i also increased the cream by almost one cup .. thank you for the recipe :
