I have been making these for years. I usually leave out the green pepper and cut the red pepper flakes in half so it will be kid "friendlier". I think this is the best ham and bean recipe.

this is so amazing i always hated ham and beans growing up but thanks to this recipe it's now one of my favorites. Watch out it can be spicy.

I used a what was left of our Thanksgiving ham and cooked in a crockpot after I sauteed my vegetables. The ham fell off the bone and added tons of flavor.. My youngest who claimed to "not like beans" devoured it! This is a keeper. Great with cornbread.

THIS WONDERFUL SOUP SMELLED SO GOOD AS IT COOKED. IT TASTED EVEN BETTER THAN THE SMELL PROMISED. I USED 1 AND 1/2 LBS OF SMOKED PICNIC AND THIS WAS ENOUGH MEAT FOR THE SOUP. I WILL MAKE THIS AGAIN AND AGAIN.

These beans are fantastic!!! I made them with 2 cups of left over ham instead of the ham hocks. They have the perfect flavor. I will make them again and again. For my personal preference though, I will half the amount of red pepper flakes, I thought it over powered the other flavors just a bit. I used left over ham, from Emerils , whiskey and cola basted ham,,which by the way is wonderful too! Thanks Emeril
