    I have made Mario's bolognese ragu many times. It is outstanding, rich flavored with subtle undertones from the veggies and milk. The color is rich and brown, just yummy.

    Made this for my family last night and they raved! It is definitely one of our family favorites now and something I will have to make for them often.

    Absolutely delicious! You will love it. Like Steve said, don't be afraid to experiment with the ingredients a little bit. I did not use the amount of oil and butter called for because it seemed way too much. I was very happy with results.

    This is one terrific Bolognese, but don't be afraid to mess with the ingredientrs a little. (Batali does in each of his books. More important than the ingredients is the technique. Check out the video on line. BUT, when browning the meat don't try for anything quite as dark as in this clip. It seems that the color in the video is distorted. A nice dark brown (instead of black works quite nicely.
