Made this along side blackened tilapia for my boyfriend and he loved it!!! It was very easy and quick and I found all the ingredients and the local farmers market. Fresh veggies are the best for this recipe.

the flavors just melded together, I added a little fresh mozzarella. I'm not a big green bean fan but I ate all of them.

I read other versions where they added ground mustard and garlic, with feta cheese, and the balsamic vinegar.

It felt like something was missing from this salad. I ended up adding white balsamic and it gave the salad the kick it needed. With the modification the recipe is a definite four star!

This is a great salad and side dish! I added it to my list of ace-in-the-hole recipes for when I invite friends to dinner. It's so simple and naturally fresh! It tastes good the 2nd and 3rd day too, though the color and texture fades a bit. Some hints: 1 Don't over cook the green beans (3 minutes in 1/2' boiling water is my favorite. 2 Remember the red onions. They add depth to the flavor. 3 Keep a high ratio of lemon juice to olive oil. 2 or 3 to one. The 2nd time I made this salad, I used the juice from 1/2 small lemon and an equal volume of olive oil. The flavor didn't pop, wasn't nearly as good. After adding the juice from the 2nd half of the lemon, it tasted much brighter and better.

I served this at my son's christening and it was amazing! Nothing was left! We used FRESH vegetables straight from the farmer's market. The veggies were so fresh we didn't need the olive oil or the lemon juice! We topped it with some fresh authentic Parmigiano-Reggiano shavings. The best vegetable salad I've ever had and it received rave reviews. Yummy!!

I made this recipe in no time, and it tastes great! We are always looking for new ways to use the veggies in our garden. Great simple recipe.
