I do not have a chimney starter, so I improvised and put a rack over the heating elements of my gas grill, same results. This is a great tasting dish...

Rather than grilling, I made this recipe on the stovetop over high heat. I also used prepared wasabi rather than wasabi powder. It was absolutely delicious. There were leftovers, and they were wonderful sliced thinly over a salad the next day. I'll definitely be making this again very soon.

I'm not sure what happened with this recipe but it left alot to be desired. The marinade tasted terrible and the finished tuna very bland. I don't think I'll be making this one again. Sorry Alton!

1st time ever making Tuna. This recipe is great. Did not modify anything - marinade 1 hour. I only had a grill to use but I made sure it was hot and closed the lid - 30 secs each side - let rest and covered for ~3 min as the recipe specified. I will be making this as an appetizer for my guests who are expected next week!!

I agree that sushi-grade tuna is at least a plus, if not actually a necessity. Evidently, my jet engine wasn't nearly as hot as AB's: a full minute on each side only resulted in the sesame seeds catching fire and the tuna barely cooked for about a quarter of an inch inwards. But the extremely high quality of the tuna I found (and thanks for the shopping tips, AB plus the simple sauce made this a delicacy. I spiced up the sauce with a little wasabi paste, and used some more thinned with water for a garnish. I've never found wasabi powder has all that much flavor.

This recipe is one of my family's favorites. The marinade is so simple and it compliments the tuna perfectly. Stop thinking about it and try this, you won't regret it.
