what a lovely mild greens dish! I find most greens too bitter but this escarole is very pleasant and the flavors are excellent. the only thing I will do differently next time is reduce the time during the wilting phase... it seemed to get too wilted and I wished by the end that it had a bit more structure. I would reduce the time to only 2-3 minutes, and heat to med-low, but I do have a gas range. don't be scared if you have never tried escarole- it was my first time trying it and I loved it!

This dish was an amazing side to a light fettuccine alfredo I made. I couldn't find escarole so I used kale and it was so good!! I will make this again and again. It was even good COLD 3 days later!
