    I used only 6 eggs and still had leftover's for a family of 4 (I also cooked some whole wheat pancakes to go along with it. I only had extra sharp cheddar cheese so I grated about 1 C. and could have used less since it has such a strong flavor. I wasn't sure how much to use since the recipe doesn't call for an amount. No shallots on hand so I diced about a Tablespoon of yellow onion and 1 green onion and sauteed that. I also substituted some frozen spinach for the peas. My husband and I loved it, but the kids did not. Their loss...our gain. LOL I'm looking forward to trying it will peas next time.

    I wanted to do something different with eggs other than the usual fare and found this recipe. I didn't have an herb-flavored cheese so I put in a little bit of shredded mozzarella. OMG! Even with the change in cheese, this tastes so good. As another reviewer stated, who would think that adding peas would taste good. Well it does!!
    I would definitely make this again. Thanks Rachael.

    I made these for New Years Brunch this year and got rave reviews! I used more than a cup of peas (I just dumped in a bunch--and I put them in frozen, which chilled the eggs a bit. I just gave them a 30-second zap in the microwave and that took care of it. Like other reviewers, I had never considered putting peas in eggs, but now it seems like such an obvious way to add color to breakfast dish. I'm definitely making these again.

    This dish was amazing. I wasn't sure how eggs and peas and cheese would turn out, because it sure doesn't SOUND delicious, but it was actually super tasty. We loved the herb cheese and soft, creamy texture it brought to the eggs and sweet caramilized shallots with the peas. I'm not sure if it made a difference, but I used frozen, petite green peas; I feel like the smaller peas cooked better than the normal ones. Made Rachel's bacon-wrapped asparagus on the side, which was a great brunch side dish. All in all, fantastic, well-recieved dish.

    We halved the recipe for two people. It was so good. Wonder why I hadn't thought to put peas in eggs before. Loved it!
