As much as I dislike breakfast, I've been told I must eat something within a half-hour of waking in order to get my metabolism going. I don't have time nor the inclination to eat in the morning but since I started making my yogurt parfaits, I'm loving it.

Trader Joes has some really delicious granolas and so each day I have a different fruit - whatever's in season, but mostly Trader Joes frozen berries are great and easy to use. I use Greek yogurt and drizzle w/honey before the berries and granola go on. I don't even think about the health benefits - it just tastes great and keeps me from being hungry for hours.

I started making this when I had it at local coffee bar and never looked back. Nothing wrong with having it any time of day - even dessert. I bet some lemon zest would be good in it as I do that with cream cheese w/o crust on a low carb diet. A little of that goes a long way in satisfaction.

Made these in some fancy wine glasses for a dinner party. They were fantastic, and I wasn't in the kitchen all night making dessert!

I used 1 cup of granola and 3 cups of fruit (strawberries, bananas, mango and 2.5 cups of yogurt to make two large parfaits for my friend and I. They were rockin' and a great way to start the day off!!!

I made lots of layers in them and put them in the freezer for a little bit, it tastes better when it has a little frost to it.

This is a great change of pace from the usual breakfast foods. It's filling. It's also great as a snack or dessert. VERY REFRESHING! I have shared this recipe with friends and will continue to do so.
