    I am learning how to cook, and made this meal for my vegetarian boyfriend, and he totally loved it. It was super easy to follow, and the flavors were incredible. I used the leftover Red Pepper Paste on my french fries and later in the week on pasta. Have fun!

    This is a great meatless meal! I used sun dried tomatoes, fresh garlic and basil instead of roasted red peppers, and my whole family thought it was great!

    The portobello as a burger was somewhat bland even after marinating. but I couldn't find smoked mozarella so used provolone instead. That was probably part of the problem. Also...these were very messy to eat. However, the roasted red pepper paste was DELICIOUS and I will try it on burgers.

    My boyfriend and I are vegetarians, but we love grilling. This recipe was perfect for us! I made the red pepper paste, but roasted my own fresh red pepper instead of using jarred. I also used provolone cheese instead of scamorza (smoked mozzarella because that was too expensive. We topped with spinach, tomato, onion, and basil leaves. These burgers were fantastic! Highly recommended.

    The mushroom with the red pepper and smoked mozz...it all works together so well. Don't miss this nice surprise!! We rotate this in with other burgers from her. So Good!
