    You both are my friends in my head. All of your meals are loved in my home expecially by my husband. Insead of the pork sausage, we had Beef Sausage.

    We like this dish very much so, and make it regularly. It is a very satisfying meal and is perfect for a weeknight. We cut back on the cayenne pepper a bit, but otherwise we follow the recipe.

    for the folks that post theres not enough rice... whatev! I;m a very well rounded cook and can follow directions. I found that my rice doesnt get enough liquid a little water towards the end for moisture and finishing touch with the 5 cups is almost a must, but the combination of spices flavor and meat is perfect. Of course you can get variation in flavor with boudain, but smoked is just right! My family love this recipe its just a must try! add heat with a seeded jalapeno or or cayenne/crushed red pepper!

    I loved this recipe so much that I made it the very next day. Also end up making the Shrimp Creole and the Okra & Tomatoes. We had leftover so we had it for lunch the next day. It was Great and very simply.

    Very good taste. After reading the recipe, I noticed that 2 cups of uncooked rice (4 cups of cooked would be not have enough sausage in it. I halved the rice and followed the recipe. Turned out very good. Either you need to add double the sausage, or add 1/2 the rice. Really fast and easy to make. My family agreed that it was very good. Definately a keeper. Keep up the good work Pat & Gina

    The flavors in this dish were excellent! I made a few minor changes - I added 2 tablespoons of crushed red pepper to the liquid as it cooked, and I also added cayenne liberally at the end. It ended up being really wonderful with that extra spice!

    I am so used to the dirty rice having ground beef in it and no taste, but OMG this was the best dirty rice I have ever had. I had so much flavor! My pot didn't turn out to be that much so I am making it again tonight and making sure I make a huge pot. Pat and Gina have done it again!

    This was a great and simple version of dirty rice! I stuck to the recipe overall, but I made a couple of changes. I used regular (not instant brown rice (which took a very long to cook, by the way, so it required more chicken broth and a little water. Also I used regular Earl Campbell hot links for the sausage, so I omitted the cayenne pepper, which would have made the rice too hot. This was enjoyed by the family, and I will definitely make it again :

    Even though there was too much liquid in recipe, just cook it down until it is absorbed (I added more rice than was called for and OMG the flavor is unbelievable! Best sausage/rice dish I have ever eaten. Love Pat n Gina. Keep up the good work!
