    This recipe is AMAZING! I highly recommend it for a unique twist on a sweet potato dessert. I made a "test" batch a few weeks ago in preparation for Thanksgiving, and it was delicious! I don't have a kitchen torch, and the broil method worked fine to carmelize the sugar. It warmed the filling up some, which actually gave it a great texture. Yummy!

    I've made this several times I saw Emeril make this in 2002. Always gets rave reviews and requests for the recipe. Best when made with
    hand harvested Johnston County, NC sweet potatos!!!!

    I added honey to the sweet potato and did sweet potato in the bottome then covered with the creme mixture instead of mixing the two.
