I am a low carber, so I had to change this some. omitted the rice. all i had was some shredded cheese. it worked fine. the best part of this recipe, for me, was the broth that was used in the cooking and then spooning it over the top. Kept things nice and moist and flavorful.

My family loved this recipe with a few of our own substitutions based on what we had. We used a mixture of shaved asiago and shredded mozzarella instead of the jar of cheese/salsa. I also used the whole can of diced tomatoes with herbs since I didn't have salsa. We used green and yellow bell peppers from our garden. My 7 yr old loved the taste of the yellow peppers. As other reviewers mentioned, I didn't have granulated bouillon, but chopped up a couple cubes. We did not find them dry at all! We are already making plans to make this again when we get more peppers from the garden.

It was OK but not great.....I like the stuffed peppers with tomato sauce better. this was rather dry

Very good recipe! I used the rotel tomatoes instead as well adds flavor and its easier. Dont worry about the shape of your red pepper because you cut it length wise so no worries on if its going to sit up right. Used chorizo for the sausage for an extra kick! Will make again.

Made these today for my husband's Birthday -- they were fabulous!!!! Just finished dinner and we cannot get enough of them! I tweeked a little -- instead of the cheese/salsa added Monterery Jack cheese. Instead of the tomatoes I added some tomato paste and tomato sauce. made the meat/rice mixture very moist. I am not a fan of red peppers but after this receipe I sure am! Thank you Paula for another great receipe -- YUMMY!!!!!!!!!!!!!

Very good recipe for stuffed peppers since I'm not a fan of how overwhelming green peppers taste. Only changed diced tomatoes with rotel and used a mexican 4 blend shredded instead of jar cheese. I enjoy Paula's recipes because they are always tasty and usually easy to prepare.

Was delicious but I made some changes. Instead of using diced tomatoes, I used a can of Rotel, was nice and spicey. Used pepperjack cheese instead of the Jarred cheese/salsa since I couldn't find it and didn't know what it was. Very happy with this receipe.
