This was one of the best recipes that I've used for Mahi. Def made a fan of my wife as well. The neighbors thought I was working at professional restaurant.

Loved it! This is a really light and tasty way to enjoy fish. It took a bit of prep - chopping mostly - but its easy to do if you make the marinade first, then the salsa and then the coconut rice. Note: all 3 parts require cilantro, so just chop a bunch of it.

AMAZING!!!!! I belong to a dinner club and prepared this dish for 12 women. Everyone loved it. I used mahi mahi fillets, prepared fish and rice as outlined and served with a side of grilled asparagus and mixed green salad with poppyseed dressing. I had people emailing me for the recipe the very next day. A KEEPER!

I didn't care for this...flavors too strong. Nice piece of fresh mild fish didn't need these strong ingredients (5 cloves garlic and onions . Marinate would be better served something else (maybe chicken like the previous person stated. Will not make again.

UH-MAZING!! i used chicken instead of the fish because my bf's "allergic" to fish and also used chicken stock in the rice in place of the water and everything came out so delicious!

I use fresh frozen vacuum sealed mahi from my grocery store, and this is a winner. If i am being lazy, i will also buy pineapple salsa from costco just to put on instead of making it fresh, but fresh is always better.

I took the coconut rice recipe as an inspiration to pair with jerk-marinated chicken. I added more coconut milk than water, and I also threw in some canned corn kernels, chopped green onions, and lime zest along with lime juice. It was so tasty!
