Ive made these five times now at least, amazing! I dont like peaches so I always use dried cranberries, I get compliments everytime. One time did it without nuts bc my nephew is allergic and were still a hit!!

I used apricots also. It was what I had in the house. I thought the cookies were to sweet. The next time I make these, will use our favorite oatmeal cookie recipe and add the white chocolate chips, dried peaches or apricots and nuts.

The peaches and white chocolate are a really nice pairing and I am not a big fan of white chocolate. It's a nice change from the normal oatmeal cookie.

Vegan anyone? Crispy, chewy perfection!! I have made these twice now in three days.
Both times I exchanged chopped dried cherries, shredded coconut, walnuts and dates. The first time they were coming out of the oven as people were arriving for a party the majority of the cookies were eaten as appetizers and then the rest were finished off for desert, there was only 6 of us.
The second time I made them vegan style. I exchanged the butter with half olive oil, half vegetable oil. I had two small Fuji apples that I made applesauce out of using orangejuice as added liquid, so I exchanged the egg with the applesauce. Again the night ended with nothing leftover and this time there was 9 of us total including 2 children.
You couldn't tell the difference between the two batches. That really surprised me but I felt very proud to be able to bake something truly outstanding for my vegan family members. Thanks Sunny for allowing me to shed some of my fear of cooking for vegans.

Best cookies I have ever made....to keep them super moist, I substituted the 1/2 cup walnuts for 1/2 cup shredded coconut. I may never make another kind of cookie!

These cookies are the bomb dot com! The only thing I changed was using cashews instead of the other nuts. SUPERB! Me and my oldest are getting ready to make some more right now before others get home! yUMMY!
