I used a gluten free angel food cake instead of the pound cake and strawberries because they were more in season than the raspberries so I can't speak to the recipe as written. With that in mind I must say that the orange cream was divine and the huge bowl of trifle was devoured by my guests. I would make it again and again.

This recipe was absolutely wonderful. The girls in my cooking club loved it. But the timing is off. It took me a lot longer to make, Then everything had to cool before it could be "assembled". It is not hard, just time consuming.

I love the recipe for the orange pound cake...even after defrosting the extra one from the freezer, it's just as good as fresh. My only problem is with the orange cream. I have made it twice, and both times it has been very runny...not really thickened at all. I'm not an inexperienced cook, and the second time I made it, I made double sure to follow the recipe exactly. Does anyone have any advice or reasoning for what might be happening? I see in the picture of this dish that it's not supposed to be as thick as a custard, but mine isn't even getting creamy!

Since buying her "Family Style" cookbook I have made this recipe many, many times for friends and at dinner parties. Sometimes I make a raspberry sauce from frozen raspberries when fresh are not availabe or I substitue blueberries.
The orange pastry cream makes this over the top.
