    This dressing is so simple to make and tasty! I find you don't have to use as much olive oil because the other ingredients give it a good consistency to begin with. I had dressing and salad leftover the next day and threw on some cooked shrimp for an easy lunch.

    This salad was so easy and a perfect complitment to the linguin with clams, however I would make this as a side dish anytime. The dressing is light and refressing and adding the hearts of celery gives an awesome flavor...this would be great all summer long.

    Would never have thought of using fresh thyme in a salad but really tastes great. The mustard is just the right kick. I'm not much of a mustard person but this made a big difference. Ended up added quite a bit of pepper for my taste and didn't miss the tomatoes that I always put in a salad. Will make again and again. Have passed it on to a few friends already.

    I also tried substituting and it worked just as well:
    Dressing: Pepper and Onion Relish (Harry and David's - left out the mustard because it already had enough "kick".
    Vegetables: Cucumber, green onions, summer squash, tomatoes (just the veggies that I had on hand that day.
    Fresh herbs.
    MMMMMM!!!
