I recently tried the stuffed shells presented by Emeril. I was a little unsure but I broke the recipe down in stages and it made it more managable. By the time I was ready to cook prep time was nil and it came out great. I substituted ground sausage for the veal and it was very good. I did have a difficult time finding extra large shells but did find medium shells. The recipe yielded close to 50 medium shells. I made several small meals and froze them. They were not as tasty as the fresh one but if thawed slowly still very good. The best part was the sauce. I forgot how good fresh homemade sauce can taste. It was nice to find a simple red sauce. I have used that recipe for my new spaghtti sauce adding a pound of ground beef to the mix for a meatier sauce. The prep time was long for everything but will decrease with time as I make this more often. Being single it is nice to make a batch and freeze individual containers. The hardest part was stuffing the shells. It took a while to judge how much to put in the shells. Overall I enjoyed making this recipe and it tasted wonderful. Even the essence; I made a batch and put it on everything. It is like having your own special seasoning shaker or jar that you can grab a pinch and throw it on whatever you are making.

I have made these many time and even made them for our family reunion and everyone loved them. I substitute ground beef and itialian sausage for the veal. Absoutely the best I've ever had.

I subsituted ground chicken for the veal. Also, as a first time shell stuffer, I would suggest to make extra shells 'cause some break and I filled more than 20. Great dish and pretty easy to make!

i added spicy sasuage to the red sauce and our company just couldn't thank me enough for going to all the trouble to make them. It really was no trouble can't wait to serve them again.

I thought this recipe was excellent. It was easy to make & I thought it tasted great. My husband on the other hand hated it. He choked down one shell just to make me happy. He isn't very daring when it comes to food and he hates spinach. But I brought some of the leftovers to our neighbors and they loved them. She said her husband doesn't like spinach either but he must not of realized it was in there. Maybe next time I'll make them without the spinach or I'll make them when he's not around.
