    I know a lot of Italian people and none of them salts and drains their eggplants. I tried to do that once or twice and all that happened was I ended up with salty eggplants and no difference in the "bitterness."

    This is a delicious low-fat, vegetarian recipe. Use as a side dish or in a sandwich. Chop the veggies smaller and use as a dip or top nice baguette slices.
