I loved this! I've had something similar before and was never able to replicate the dressing. This dressing is better than a restaurant. I didn't have apricot preserves on hand, so I subsituted peach and it was fabulous! Feta will work in a pinch if you don't have blue cheese. Try adding some walnuts for a little extra texture. The combo is quite delicious with the pears and cheese. I will make this again and again. Enjoy!

The peppery taste of the arugula perfectly matches the sweetness of the apricots and the tartnest of the blue cheese. This is also works well if you substitute low-cal ingredients like low-sugar apricot preserves, lowfat blue chees salad dressing and using minimal olive oil. Thanks Rachel, for getting me out of a rut!

Boy oh boy this salad is terrific. I have never considered myself a salad eater but this one you don't even need an entree, it's that good!

I made this for my first dinner party, and it started the meal off right. The flavors were awesome and the presentation is beautiful. Highly recommend this for taste and it was sooo easy to make.

Whenever I am asked to bring a salad to a dinner party, I bring this one. Sometimes I add candied walnuts or almonds. For Christmas eve dinner, I used pears with red skins which made it look very festive.

I used sherry vinegar. Very good. Different. Kids liked it. That's a big plus!
