This was really fabulous and so easy. I needed to make a quick dish for a potluck I was hosting at my home for my co-workers. I had a bunch of zucchini, red and yellow bell pepper, and lovely asparagus left over from purchasing too much for another gathering the previous weekend. With some red onion I just chunked it all up, tossed on some olive oil and charred it all in the grill pan on my gas grill. It was a hit and just ridiculously easy to make. I'm looking at other comments about adding corn, mushrooms, using leftovers in pasta salad (brilliant. I think I may also try doing this with lettuce or spinach wraps as an appetizer dish. Really versatile.

Ellie, I love your show and I am trying a lot of your recipes. Just tried the grilled veggie salad and loved it, but my husband wasn't crazy about it. I love the flavors, but I changed the mint to fresh basil just because I had basil on hand. It was a little oily for me, so when I make it again I will cut way back on the oil in the dressing. The flavors are some of my favorite. I even used the left overs and added them to some left over pasta. Yum!

This tastes exactly as it sounds. There is a lot of prep work. Its a very easy salad to make, just takes a long time. I guess you could prep it ahead, and leave it in the fridge until its time to eat. Maybe a less rough of a chop too will save some time.
I changed mine up a bit. I didn't put the feta (lactose intolerant and mint. I added some left over dill we had in the fridge and I roasted a corn on the cob and added it to the salad. The salad has many natural sugars from the veggies, but, this changed it a bit. I also feel that the dill added a nice freshness.

I make this often! You can grill vegees ahead (I use my George Forman grill and keep in refrig. all week until ready to use, then just chop vegees and mix dressing at the last minute. Be careful not to overgrill eggplant, it will become mushy. Also makes a great vegee sandwich inside a pita! Takes a little time up front, but well worth the effort!

I made this for my family yesterday. I'm not an eggplant fan so I doubled the zucchini. Everyone loved it! I served it over brown rice along with Greek Chicken............big hit!!! Thanks Ellie!! This is a keeper!

Made this today after watching the show. The family liked but I still DO NOT like egg plant. So next time I will use more zuchinni or other squash. Loved the feta cheese on top. I had some extra large mushrooms around so I grilled them and put them in, gave it a meating texture. I like the other reviewers ideas about adding rice. Next time I will try that.

This receipe is delicious! It seems like alot of prep work but believe me it's worth it. My son & I are trying to lose weight so I'm trying all of Ellie's receipes and my son & I just loved this one! GREAT JOB ELLIE!!!

I made this for a birthday party and everybody loved it and was asking for the recipe. I had some left over because I made such a big batch and I froze it and add it to pasta. I just left out the mint!
