    This was my first experience with boxty and I can tell this recipe is a keeper. I had to experiment a bit to find the right consistency for the batter since I didn't see the show in which this was prepared, but even the "mistakes" were tasty. Mmmmmmmmm!

    We had boxty in Dublin and I was hoping to find an equitable recipe here....and I did. Served it as we had there, a main dinner course. I made beef stew with ale and mushrooms, topped the boxty with it and we had a wonderful St. Patrick's Day dinner. Finished it all with Pavlova...it was very special.

    I was looking for a recipie which comes out like a pancake instead of hash browns. This is it folks. Light, and incredibly delicious.

    Easy and filling on top of delicious! How could any preparation of a potato for breakfast (or any meal for that matter go too far wrong. Thanks for a nice homestyle recipe.
