I was looking for low carb recipes and this one fit. I weighted the chicken breast to be sure it was 6 oz, used low fat ricotta cheese and fresh spinach. I did use a little lemon zest in the spinach mixture to give it little pop instead of the nutmeg. I didn't use the butter. Just rubbed the chicken with a little olive oil and fresh herbs. Very good and more importantly with a diet, was very satisfying even without a complex carb side dish.

This recipe was fantastic! I needed to take a dinner with me to a friends house and I preped the chicken. All I had to do was to bake the chicken when I got there. The house smelled great while it cooked and our mouths were watering for the yummy morsels. We were not disappointed.

I think this was a great dish. I used cottage cheese since I didn't have ricotta and hubby doesn't like it much anyway. I also used a Romona, Parmesan, and asiago blend of cheeses which was fantastic tasting! Love the topping but will decrease the butter amount a bit I think next time.

I don't rate recipes often at least not until I have made it a couple of times. This is very good and generally people of different palates like it. So seasoning is a personal choice as it is in any recipe, so I never really rate on this dimension. I do cut the butter down to 1/2 of what is suggested in the recipe and I have used a package of frozen spinach instead of going through the steps of cooking fresh.
This will go into my recipe archives for sure.

This chicken dish has become one of the best chicken dishes I have made to date. I am not a person who loves chicken... but this recipe was absolutely delicious and has revived a liking for chicken again. One more thing, my boyfriend has sworn that this is his favorite chicken dish and has asked for us to make it tonight for Valentine's Day dinner. However, I will add some mozzarella cheese to mix just to get a little more of a cheesy texture.

This was an absolutely delicious dish. Everyone loved it, including my son. This was a great way to serve him spinach. I did, however, decide to tweak the recipe a little. I doubled the amount of spinach, and cut the amount of butter in half. This goes very well served over basmatti rice.

I thought it was good but a bit dry in the center. I think next time some mozz cheese may be good added to the filling. My husband did like it though.

This is one of my favorite dishes. I dont like spinach but it is so tasty in this dish and it really is a foolproof recipe. I have made this more times than I can count and I still get rave revues on it.
