This is our go-to Kale recipe! I used the coconut milk only once and enjoyed the dish, but prefer it without the coconut milk and instead add extra stock plus a tablespoon of corn starch to thicken it up a bit. So tasty!

Wow! I just now finish making this recipe using, Butter Flavored Cooking Spray, 3 strips of Turkey Bacon, 1/2 Vidalia Onion, used beef boullion cube in 1 cup of water, 1/2 cup of Silk Coconut Milk and added just a touch of garlic powder, onion powder and black pepper. Absolutely delicious and my house smells WONDERFUL!!! This was my first time cooking kale and will definitely be making this dish again.

Cooked this recipe for dinner and it was really, really good. Definitely for someone that likes leafy greans, like collards. My husband said he preferred this over collards. I added portebello mushrooms from Rachel Rays' recipe. It added more texture and tasted great!

This recipe is super easy to prepare, and really delicious. I agree that the butter really isn't needed, since you are rendering the fat from the bacon. Wonderful flavors!

I don't think the extra butter is necessary, the rendered bacon fat is enough to flavor the dish. I subbed 1/2 and 1/2 for coconut milk. Also, remove the bacon after cooking (I left in whole slices, then chopped after it cooked, then toss back in before serving to make sure it stays crispy.

I've eaten kale a lot and this is one of my favorite ways to have it. I didn't have bacon so I used butter and coconut oil. The sweetness of the coconut milk works really well with the bitterness of the kale. I used tuscan kale.

Great flavor. I loved the coconut milk with the broth. I loved the crunch from the kale. I added some leftover califlower to the pan. Tasty, healthy dish.

I must say this was pretty tasty. I've been looking for new, fresh vegetable sides, especially kale and glad I found this. Although I didn't have coconut milk it still tasted good. I only used 1/2 cup of broth because I do not like soggy vegetables. I will make this again and will use it with other greens like collards and spinach, maybe even string beans.
