    We love it !!! I served it in a flat out with the mix green inside.....Hubby said delicious and healthy so nothing else to ask for.

    Nice taste and you won't know it's low fat. I subbed parsley for cilantro and cashews for almonds as only changes. Agree with those who plan to add more curry powder next time!

    Pretty good. Easy to make. I also used Costco Roasted Chicken Breast. I added chopped celery for extra crunch & dried cranberries for sweetness. I also added more curry powder than called for. I was craving a sandwich, so I had it with wheat bread. Yummy! :

    I used a Cosco chicken so this was certainly easy. I'm giving it 5 b/c it tasted pretty good for being a low-fat version of curry chicken, but in all honesty, I usually don't rate anything a 5 unless it's fabulous. Let's face it, nothing low fat tastes all that fabulous, but this was pretty close. You go Ellie.

    I made this for my family when the show first aired. We all love it, especially the kids. I did change the method of cooking for the chicken and chose to steam the breasts instead. I also omitted the salt to taste and 1 TBL of the mayo. This recipe is so flavorful and so healthy, I just have to thank you for sharing it.

    I just made this ahead for guests coming tomorrow and want to eat it tonight for dinner! The flavors are wonderful. I used a rather spicy red curry powder and would love to add more but not sure others want it that pungent. Also used greek yogurt and know it will be less runny tomorrow because the yogurt is so thick.. Did sub crasins for the grapes because I love a little chewy in chicken salad. Added 1/4 cup almonds already and will toss another 1/4 cup in tomorrow to ensure a little crunch. Take the time to toast your almonds, it improves their flavor 10x. A wonderfully creamy chicken salad that no one else will know is healthier than the norm. A+

    I have been making a conscious effort to watch my weight so that I can slim down for an upcoming wedding. I find that a lot of foods that are healthy taste great, but then an hour later I'm feeling unsatisfied and still hungry... so I grab junk to snack... bad bad bad!!!!

    This I decided to try, only because I had made a waldorf salad earlier in the day, and had almost all of the ingredients for Ellie's on hand. I suppose I might have compromised the integrity of the recipe, but I did not have curry powder, so I used Tandoori seasoning (I know, I know... not the same thing, but keep reading. Also, I didn't have plain yogurt, I only had vanilla flavored Greek yogurt. OH WELL!

    For chicken I had Purdue thin cut breasts, and did the same thing in terms of boiling for the 8 mins, but I found that 10 mins essentially was all I needed to have them cooked through.

    I tossed all of the ingredients together, and it's now chilling in the fridge for later. The thing I like about this recipe is even though I didn't have exactly the same ingredients, with some creativity, imagination, and substitution, I was able to make something with a similar "Indian" flare without all of the calories.

    Great recipe, and once I buy real curry powder I am looking forward to giving this another whirl!
