    I don't know if I can ever eat the stuff out of the jar anymore. I used to think you had to simmer sauce all day, then the acid would kill my stomach! This was a great recipe and so easy to make! It will become my base recipe for all my dishes requiring tomato sauce. I did modify it a little bit by browning my Chorizo in the pan, then removing it before continuing with the rest of the sauce. I also added 2 tbsp of tomato paste and 1 cup of no sodium beef broth to stretch it out a little. If you are trying to use up the package of dry italian spices your parents gave you this Christmas in your stocking, soak 2tbsp in a splash of rice vinegar for a couple minutes and add with the carrots instead of using the thyme.

    Only thing that I did different was to add freshly chopped basil when I added the thyme. This dish is mouth watering.

    I make this about once a month. It makes
    enough for two batches for our pasta loving family of 5. I put half into a
    container and freeze it for later and we
    eat the other half that night. Works out great. Nice thick sauce with lots of flavor.

    My grandmother made a sauce very similar to this, and it is excellent! This recipe is also very versatile, and you can experiment with the ingredients and amounts until you get it "just right." For me, I added fresh basil leaves in it, and it blended really well with the thyme. Wonderful flavor!

    This is the best spaghetti sauce I have ever made. I feel like I'm eating out it's so good. It was also very easy to make and I like the rustic look of it. No need to ever buy any sauce again! Wonderful!
