I used roasted chicken breasts for 45 minutes at 350 and added a little dijon mustard and sweet gherkins. It was fantastic.

It never occurred to me to add chicken stock to chicken salad, but it adds a nice extra layer of flavor. This is a great basic recipe to build upon, as other raters have commented. Like myself, every Food Network addict loves to tinker with a recipe. Can't be helped.

I made this with leftover chicken from Emeril's Perfect Roast Chicken recipe (also found on this site and my husband loved it! He had a chicken salad sandwich for lunch two times this week (his request and he also wanted me to make it as a side for our picnic this afternoon. I think the eggs make the biggest difference in this recipe. It gives it a great taste. I also added a bit of onion as well.

I made this for my daughter's graduation party (150 guests People kept asking me where I purchased the salad from, it was great to tell them it was homemade. I cut back on the salt and lemon pepper by half and added almonds. The flavors just seemed to flow extremely well together. Adding the chicken broth is brillant as I will be using that trick for other recipes as well.
