    I have been looking for a good chicken salad recipe because my husband loves it and it's so expensive when you buy it from the deli. This recipe was just right! It was also a perfect way to use the leftovers from a rotissere chicken.

    I made this one week-end for fun. Boy!,
    it was so easy and good. It has now become a staple for me. Paula's recipes are always as good as they look on TV.
    I just love her and the show.

    This is a fabulous basic chicken salad recipe. It lends well to many adaptations -- I often add toasted almonds, red seedless grapes and scallions for a twist. I'm not a fan of egg in my chicken salad, so I usually omit it.

    Everyone I who tastes this raves about it!

    This is a really EASY recipe and it is very creamy. I did not have the time to boil a chicken, so I bought one of the rotisserie chickens from a local grocery store. I did peel the skin off the chicken since it is so heavily seasoned. I also did not use the lemon-pepper seasoning since I was out, but it turned out fine. I also suggest using leaves of lettuce to serve this on instead of bread!

    This chicken salad was so good. I do have to admit that I made a few changes out of necessity and personal taste but they weren't drastic enough changes to make it an entirely different recipe. I used boneless skinless chicken breasts poached in chicken broth with the celery and onions because that's what I had on hand. I added a tablespoon of spicy brown mustard, half a finely chopped white onion and a a teaspoon and a half of white sugar to the salad. I also used the tops and greens of the celery from the heart of the celery just because I really like the taste of the celery greens. I didn't have any lemon pepper so I used one half teaspoon of black pepper and the juice of half a lemon. This is now going to be my staple chicken salad recipe. My husband liked it so much that I had to ask him to save me enough for a sandwich for lunch, otherwise he would have eaten all of it!

    Thanks Paula! I have been looking for a good, traditional chicken salad recipe and this is it. Look no further! It's just perfect as is...but you can "dress it up" once in a while with grapes or almond slices. Yum! This one I will make again and again.
