cooking the lamb covered with a cup of water made the lamb extra juicy & tender.be bold with the oregano.

I am Greek and this recipe brought back the memories from when I was a child in my big greek family on Easter sunday. This was easy to make and was very delicious. Reminded me of the lamb in Greece.

This is a nice, simple, great tasting lamb. But what ultimately made it a 5 star hit, was taking the juice at the bottom of the pan, reheat on stove and add some dry red wine and a pinch of rosemary. Simmer until it reduces a little. My kids liked it so much they starting dipping each piece of meat in the sauce. I thought they were going to eat the bone.

Lamb is an excellent dish. If you have only had it with mint jelly, try this instead.
