    I think the advice about using chuck vs. the lean stuff they package for stew at the grocery store makes a big difference. I always buy thick chuck steaks and cut them up instead of buying pre-cut stew beef now. Makes a huge difference. Also, like another reviewer said, the red potatoes have an unpleasant dirty flavor in this--I use russet now. And cut all veggies smaller, at least by half, if you want a soup you can eat with a spoon ( I know some people serve stew over mashed potatoes or rice and eat with fork and knife--might be ok for that.Otherwise, great recipe. Easy but time consuming, so start it early in the afternoon for it to be ready at dinnertime.

    I made this stew for my husband and I as well as a freind who is pregnat and on bedrest. Since she and I are both pregnant I left out all of the salt and just instructed the guys to salt to taste after it was prepared. It turned out deliscious. I used only 4 - 14 oz cans of beef broth instead of the called for 10 cups. I also left out the onions (only because I didn't realize I didn't have any and the tomatoes and tomato paste. I did however add 16 oz of sliced fresh mushrooms. All of the tastes worked together well and it tasted great!

    I was so proud of this stew It was so amazing. The taste and the smell was to die for. I made some for my elderly inlaws and they couldnt have been happier!!
    I didnt use all the tomatoes but still worked out great.

    This stew was fantastic, I have a very picky eater and while it was cooking he was concerned because it was a different stew than I usually make, but after tasting the stew he said it was much better than the beef stew I usually make -- Thank you Food Networkl

    ACTUALLY, THIS IS PRETTY MUCH THE SAME STEW I ALWAYS MAKE. I JUST HAVE NEVER PUT IT IN THE OVEN BEFORE, INSTEAD, SIMMERING MINE ON THE STOVETOP FROM THE START, & DO NOT ADD EITHER TOMATOES OR THAT LITTLE DAB OF VINEGAR @ THE END......SO I TRIED IT THIS TIME. FOR THAT, I GAVE IT 4 STARS. TO ME IT'S JUST GOOD BASIC STEW BUT NOT VERY DIFFERENT. I USED HALF TINY RED POTATOES & HALF SWEET POTATOES IN MINE, EASED UP ON THE BROTH, ADDED A PINCH OF HERBES DE PROVENCE & TOPPED MINE WITH DILL/CHIVE DUMPLINGS. IT WAS GOOD & SATISFYING.

    Very good. My husband & I each at a bowl then my 16 yr old son ate every bit of the pot in less than 24 hours. Will make regularly.

    This receipe is a keeper. I followed the recipe with some changes; Yukon potatoes, drained diced tomates ,3cans of beef broth, 2 chans of chicken stock both were low in sodium, balsimic vinegar, a dash of hot sause and dried seasonings vs. fresh (i.e. thyme & parsley. It takes a good 30-45 minutes for prep (for the newbie but it's a wonderful dish for the weekend. I cooked the stew on the stovetop

    I just made this stew for dinner!!! Wow!!! I used 4 cups of beef broth and a bottle of Bordeaux wine!!! Great flavor!!! I made Ina Garten's Buttermilk cheddar biscuits to go with!!! I will make this again as I will the biscuits!!! A great dinner thanks to Ina and the Food Network!!!

    I had tried Tyler's Ultimate Beef Stew and my boyfriend was not impressed. The flavors were off and it wasn't thick and hearty.

    So I decided to give this recipe a try. Excellent thick rich stew studded with tender chunks of veggies and meat. The vinegar at the end brings extra notes of flavor to round out this great stew. Hearty and satisfying - great to serve with crusty bread and a nice glass of whole milk.

    Some tips & modification to the recipe:
    * You don't need a dutch oven. I used my very large all clad stock pot and it worked perfectly.
    * I reduced the amount of meat to 1 lbs (it was all that I had steak tips. The meat breaks apart throughout - so creates a nice beef sauce.
    * I didn't clean off the browned bits from the bottom of the pan after cooking the meat to keep extra flavor in the stew. Just throw butter in, saute onion and garlic, then use the tomato paste to deglaze the brown bits. It adds extra thickener and flavor.
    * LIke others here I reduced the liquid to 8 cups of beef stock.
    * I omitted the whole tomatoes.
    * I used balsamic vinegar instead of red wine vinegar.
