    Had my first panzanella salad at a local restaurant and could not get enough. This recipe is exactly like that one so I was in heaven. I used balsamic vinegar instead of wine vinegar and that punched up the flavor. I also added cubed mozzarella and chopped baby English cucumbers. I thought my husband was going to start licking the serving dish when it was all gone. So easy and great on a VERY hot evening.

    This is a good basic Tuscan bread salad recipe. I'd recommend a little more bread to be more authentic, and it's very important for the bread to be stale. The point of the recipe originally was to make use of stale bread that was too hard to eat. If you use fresh bread, it will probably turn out too soggy and mushy. As others have said, cucumbers are also traditional, but I prefer it without. I also like a splash of decent balsamic vinegar to give more depth. Lastly, with a recipe this basic, the quality of your ingredients is really, really important.
